Muffins are magical. At least they have been for my family, and for many of my friends' families as well. A wholesome, handheld snack with infinite possibilities, they're my favourite food to have on hand.
I created this recipe when a friend of mine was having trouble getting her toddler to eat (or even try) vegetables. These simple muffins are delectably fluffy, delicious and chock full of healthy ingredients. This recipe is really adaptable as well. Feel free to change out the dried fruits, add other additions like nuts or seed or use a plant based milk alternative to make it dairy free/vegan.
